Here at ANFU, we think birthdays are really special and should be celebrated to the fullest! When we came across this healthy cake alternative, we thought it would be perfect for a summertime birthday celebration!
No Bake Watermelon Cake Recipe
- 1 Large Watermelon
- Whipped Cream
- Almonds and or granola
First, cut each end of the watermelon and carve off the rind leaving the heart of the watermelon. Pat the watermelon with a paper towel to remove excess moisture. Place the watermelon in the refrigerator until it’s chilled. Once the watermelon is chilled, frost with whipped cream and garnish with desired toppings (fruit, almonds, and or granola).
For a whipped cream alternative, make Greek yogurt frosting!
Greek Yogurt Frosting:
- 1 12oz Container Plain Chobani Yogurt
- 1 Tsp Vanilla Extract
- 1 Tsp Almond Extract
- 1 Packet Truvia
- 1 Tbsp Vanilla Pudding Mix
- 1 Cup Almonds
Mix all ingredients together in a bowl, frost the watermelon and enjoy!
